ARMENIAN AND MIDDLE EASTERN CUISINE & MORE BY ANI

INGREDIENTS

For Dough :

4 c Flour / sifted
1/4 c Butter / soft & cut in small cubess
1 tsp. Pure Vanilla Extract
2 tsp. Pure Almond Extract
1 c lukewarm Milk / place in microwave for 35 seconds.
2 eggs + 1 egg yolk
1 1/2 tsp. of Active Dry Instant Yeast
1/4 cup of sugar

Sweet Cheese Filling :

1 - 15oz. tub of cold Ricotta Cheese
1 oz. Cream Cheese
1 1/2 c Mozzarella Cheese / shredded
1/4 cup of sugar
1 Tbsp. Pure Honey
2 tbs of soft Butter
2 Egg yolks
2 tsp. Vanilla Extract
The zest of 1 small Lemon

Sugar Glaze :

1 c Powdered Sugar
1 tsp. Lemon Juice / optional
1 to 2 Tbsp. Cold Milk / if too thick ? add drops of milk. If too thin? add more icing sugar.

Place in a sandwich bag, clip a tini piece off the bottom corner of the bag and place in the fridge until time to use.

DIRECTIONS

Begin by warming the milk and adding to your mixing bowl with the 2 eggs + the 1 yolk.
Mix for a minute with the whisk attachment of your machine.

Sift in the flour now along with the yeast and whisk a minute again.
Now add in the rest of the ingredients.
Chane the attachment with the HOOK. Mix about 5 to 7 minutes until the dough begins to pull away from the sides of the mixing bowl.
The dough should be elastic
and smooth.

Spray with cooking spray the mixing bowl and return the dough ball back in the bowl.
Cover with plastic wrap and place in a warm place to rest and rise
for about an 1 1/2 hours to 2 hours. It needs to double in size.

In the mean time prepare the cheese filling.

Add all the ingredients to a bowl. Using fork or pastry blender mix until all is well combined. Place in the fridge until time to use.
Spread the cheese on top.
Fold the dough in 3 sections.

Rolling out the DOUGH

STEP 1 -
Lightly flour your surface.

STEP 2 -
Roll the dough out into rectangle about 1/4" in thickness.

STEP 3 -
Spread the filling generally.

STEP 4 -
Roll out the doug bottom 1/3 way up and then bring over the other side of the dough, and cover the top.
Press gently down with your open oalms.

STEP 5 -
Using a pizza cutter, cut the dough in equal parts. 1 1/2" wide.

STEP 6 -
Twist each part 2 to 3 times from the middle to the ends, and transfer onto a baking sheet lined with a parchment paper.

STEP 7 -
PREHEAT THE OVEN on 350F

STEP 8 -
Cover and let rest 5 to 10 minutes until oven gets hot.

Brush with an egg wash and bake in preheated oven for 20 to 30 minutes or until golden brown.

If thectops start turning too it browned? before the bottoms are, then cover the top of pan with aluminium foil.

ICING

Mix the icing sugar with the milk, add the lemon if you like, until smooth and the right consistency. Make sure the twists are cool when squezzing the icing.
Let it cool off completely.
