BRUSCHETTA SAUCE PASTA CLASSICO

INGREDIENTS ...

1 bag - 8.8 oz. / or 250g of Roma brand ( Tallarin-Tagliaatelle Pasta )
1/4 cup of Classico Natural cheese blend - Parmesan, Romano & Asiago Cheese mix / or use Parmesan Cheese
4 large Tomatoes / diced coarsely
2-3 stalks of Celery / dice very finely
2 small Onions / diced finely
1 large head of Garlic / grated or minsed
1/2 cup to 1 cup fresh Basil / diced
1 small Persian Cucumber / diced finely
1 - 8 oz. can of Tomatoe Sauce
1/3 cup Del Monte Ketchup
1 Tbs. Red Vinegar
1/4 cup Olive Oil / fine quality
2 Tbs. Butter
Crumbled Greek Fets Cheese / for topping
Seasonings & Ect.

Citric Acid / less then 1/4 Tsp.
1/4 tsp. Chili Fkakes / more or less as you like
2 Tbs. Oregano / to start off with.. Then add another 2 to 3 Tbs. plus while cooking for more intense flavor.
2 Tbs. Italian Seasoning / to start off with.. Then add another 2 to 3 Tbs. plus while cooking for more intense flavor.
1 1/2 tsp. Pink Salt or regular table Salt / more or less up to you
1/4 tsp. or less Black Pepper / or to your own taste
1 Tbs. Sugar / Then add another 3to 4 Tbs. while cooking to minimize the acid from the tomatoes.

SIMMERING FOR 1 HOUR AT LEAST .... :)
