ARMENIAN CHICKPEA SALAD
Important !!
Soak the chickpeas overnight in cold water. Next day, rinse them well and place in a pot of water and a little salt and simmer until tender.
Rinse under cold water and set aside to cool off.
then place in a deep bowl and add in all the remaining ingredients.
Mix in a bowl your vinegars, olive oil and lemon, with a pinch of salt and whisk all together. Set aside to marinate.
INGREDIENTS...
1 c to 1 1/2 c dried Chickpeas / soaked overnight in warm water / or 2 cans of Garbanzo beans, drained and rinsed thoroughly.
2 Tbsp. Red Wine Vinegar / or to taste
2 Tbsp. Balsamic Vinegar / or to taste
1 to 2 tsp. Lemon Juice / or to taste
1/2 c Large Black Kalamata Olives / slivered lengthwise
1/4 c to 1/2 c Green Kalamata Olives / slivered lengthwise
1/3 c pickled Green Olives with Red Pepper / sliced
2 c Cherry Tomatoes / cut in 1/2 " cubes / drained in a streiner
1/3 c Red Onions / chopped
1/2 c of finely chopped Green Onions
1/2 c Italian Parsley / chopped finely or more
1/2 c Fresh Basil / chopped or more
1/2 c Fresh Mint / chopped finely or more
2 Cloves of Garlic / minced
6 to 7 Tbsp. best Extra Virgin Oil / to your taste
Aleppo Pepper to taste
Salt to taste and Pepper
