PEANUT BUTTER BANANA COGNAC WALNUT CAKE ... 😉
.
BATTER
1/2 c ( 1 stick ) Butter / room temperature
3/4 c Sugar
2 Eggs
2 c All-Purpose Flour
1 tsp. Baking Soda
1/4 tsp. Salt
2 large ripe Bnanas
1/4 c Brown Sugar + more to sprinkle in pan.
1 Tbsp. heaping Creamy Peanut Butter
1 Tbsp. Cognac
1/2 tsp. Vanilla Extract
1/2 tsp. Orange Extract
1/2 tsp. Almond Extract
1/2 tsp. Ground Cinnamon + 2 tsp. to sprinkle in pan.
Roasted Walnuts / as much as you like. Enough to cover the bottom of the pan.
2 tsp. Cloud/ to sprinkle in the pan
Cooking Spray
DIRECTIONS...
Preheat the oven to 350F
Spray the springform pan.
Or a 9x5 pan or two 8x4 pans.
In a small bowl, cut then mash the bananas.
Add the brown sugar, vanilla, almond , orange extracts, and the ground cinnamon.
In a large bowl, cream the butter and sugar together until light and fluffy.
Add in the eggs and beat about a minute or until smooth.
Now add in your sifted flour the baking soda and salt.
Mix until well combined.
Gradually add the flour while mixing with a wooden spoon into to the egg mixture.
Make sure it is well incorporated.
Next, pour in the mashed banana mix, and the cognac and mix with the wooden spoon until combined.
Now decorating the bottom of the pan is optional.
You can do what ever your heart desires or follow my steps bellow in the pictures.
Bake at 350F for 35-40 minutes or until cake tester comes out clean with just a few moist crumbs stuck to it.
If using one 9x5 pan, bake at 350F for 30 minutes; then lower the temp to 325F and bake for 15-20 or until cake tester comes out clean with just a few moist crumbs stuck to it.
Once baked place cake on a wire wreck to cool off a little.
Undo the springtime, and carefully remove the ring around it.
Then carefully cut off the center part of the cake where it is poofee 😉
Now place the paper doily on the cake bottom that you just cut, and carefully flip it over on the serving platter.
Bake few minutes now the lair of the cake we cut off until browned a little then crumble on the edges of the cake. Sprinkle some powdered Sugar on the edges now , or you can spread the semi crunch cake pieces all over the cake, following with good sprinkle of the powdered sugar 😊
