SIMIT - Middle Eastern Sesame Bread
Plain or with Kashkaval Cheese
.
DOUGH ...
.
3 C All Purpose Flour
1/2 c Flour extra if needed
3 eggs
2 Tbsp. Powdered Milk
3/4 c Warm Water 90F to dilute the yeast in
1 packet Active Dry Yeast
1 tsp. White Vinegar
1 tsp sugar
1/2 tsp. Salt
Cookie Sheets
Wax Paper

Topping ..
1/4 c Grape Molasses ( or Organic Molasses )
1/4 c Warm Water
Dilute both together in a bowl
1 c Roasted Sesame Seeds or raw sesame seeds.
I used roasted sesame seeds.
You can also add Anise seeds mixed with sesame or separately. Your choice.
For the cheese and meat filling, you can make your own of your taste,if not? just leave it plain.
For the cheese, I used graded 1 c. KASHKAVAL CHEESE with my own fresh grown Basil leaves and 1 Tbsp. Cream Cheese.

Instructions...
.
1 - Proof your yeast in warm water and sugar and set aside until proofed, about 5 to 7 minutes.
.
2 - in your mixing bowl as your flour, salt, vinegar, and lightly beaten egg, powdered milk and rub with your fingers till combined.
3 - Add your proofed yeast and start kneading.
Knead about 10 to 15 minutes by hand ,if using mixer? Knead for 7 minutes. Until you get a soft and semi sticky dough.
You may or may not need to add water depending on your flower and weather. Make sure your door is locked and kind of sticky not hard. Needing your day is very important for fuffier bread.
4 - Place your dough in a lightly oiled bowl, cover with plastic and a towel and place in a warm place in your kitchen until it doubles. This process should take anywhere depending on the weather between one and a half to two and a half hours.
5 - when your dog has doubled put on a lightly floured surface and try to open your door with your fingertips do not use a rolling pin yet. If your job is to the elasticiy ? Cover with the nylon and towel and let it rest for 5 minutes and try to open the dough again with your fingers, until you have opened as much as you can. Roll your dough as shown in picture bellow.
Now ...
Make sure you lightly flour your surface before you roll out your dough to stretch it out.
Cut into as many pieces as you would like.
Remembering that, you need bigger pieces for your sesame twist and medium size if you are going to stuff them with filling.
6 - Round off your dough pieces into ball forms, cover them with nylon and towel, and let it rest for about 10 minutes.
7 - Please follow picture directions shown below,how to make the simit twists and for the boreg type. Once done cover them with nylon and towel again for 5 minutes before baking.
(( PREPARATION HEAT OVEN ))
10 minutes before baking.
8 - Dip your twists, for a second on each side in the grape molasses, then into the sesame seeds, and place them on a waxed paper cookie sheet.
9 - Place tray on the middle shelf of oven, and bake 10 to 15 minutes.
Depending on the heat of your oven, keep your eyes on them so they don't burn , they cook kind of fast.

IMPORTANT !!!
If you need to preheat your SIMIT ? Wrap them up in foil and bake them or in your oven for 5 minutes to 7 minutes, or use your mini toastet oven.
DO NOT MICROWAVE THESE !!
