MAMOUNIA
(Syrian Semolina Pudding)

INGREDIENTS

1 c coarse Semolina
3 Tbsp. of Ghee / or Unsalted Butter

5 c of Water (see note below )
1 1/2 c granulated Sugar
3 Tbsp. of Rose Water

Nuts of your choice as in Pistachios, Walnuts, Almonds etc. and cinnamon for decorating the top after it has cooled off.

Note:
The amount of water will affect the consistency of the mamounia. If you like your pudding to be on the thick side, go for 4 cups. If on the other hand you like it to be thinner, use 5

Directions

In a pot add water and sugar and bring to a boil
In another pot melt the ghee or the butter.Melt over low heat.

Add the semolina to the melted ghee and stir until the semolina is very lightly golden color. This should take like 5 to 7 minutes over low/medium heat still.

Add the toasted semolina to the water slowly, while stirring continuously until the mixture thickens. About 5 to 7 minutes again.

Turn off the heat and cover the pot with the lid for about 10 minutes.

Pour them into your choice of dishes or containers.
Cover tops with lids or foil.
If using foil, make sure to puncture couple of holes with a knife.

Serve the mamounia decorated with nuts and dusting of cinnamon , cranberries or dried fruits.
