COCONUT CREAM CHEESE CAKE

Ingredients...

1 c Flour / sifted
1 stick Butter / room temp.
1 1/4 c Raw Sugar
1 - 8 oz. Cream Cheese / room temp.
3 Eggs / beated
3 tsp. Orange Blossom
1 whole small lemon zest
Small pinch salt
1 tsp. Baking Powder
1/2 tsp. Nutmeg or Cinnamon / both are optional.
1 1/2 tsp. Vanilla Extract
1/2 to 1 c coconut / shredded

Mix the flour with the salt and baking powder and set aside.

FRUIT MIX

3 tsp. Sugar
3 tsp. Hanesi Cognac
1 c Fresh Strawberries / sliced
1 container Raspberries
Gently mix all and place in the fridge.
Serve on top of cake or on individual slices.

Directions:

In the bowl of your mixer, place your room temperature butter and whisk until creamy and fluffy.

Add the sugar , lemon zest, vanilla, orange blossom, and mix again until all are combined.

Now add your room temperature cream cheese, and mix well until well blended.

Add in your three eggs one at a time while, mixing well in between each egg on medium-high speed.
Now gradually and slowly add in your flour.

Once all the flour has been used in your batter, raise the speed too high and whisk for about two three minutes,until creamy.

Spray for baking pan or baking pans with cooking butter spray and flour lightly all over. Sprinkle the bottom with a layer of the shredded coconut, you can use more if you like.

Sprinkle some lightly buttered coconut on the bottom of your cake pan, then carefully spoon on the batter.

Continue to slowly pourring the rest of the prepared batter into your pan or pans.
Gently tap on counter then from side to side , to settle the batter.

Then pound on your workspace gently about 5 to 8 times, to release the air bubbles/ pockets.

Place in the center wrack of your oven in the middle, and bake for 25 to 35 minutes according to individuals oven Heat.

Poke the center of your cake with a toothpick to make sure it comes out clean before removing it from the oven.

Do not forget to rotate your pants every 15 minutes until done.

Place in a cool ventilated area to cool off before cutting and serving.
