ARMENIAN SUJUK & CHEESE / SPINACH & CHEESE FLAT BREADS
Ingredients...
DOUGH ...
4 c sifted Flour
1 Tbsp. Instant Dry Yeast dissolved on 1/2 c warm water with 1 tsp. Sugar. Set aside to proof.
1 3/4 c to 2 c warm water 90 F/ or as much as needed to make a very soft dough.
1/2 c Canola Or any Vegetable Oil
1 tsp. Salt
2 tsp. LEBANESE 7 SPICE ZA'ATAR, or use my own mix on my page.

SPINACH MIX ...

4 to 5 Tbsp. Olive Oil / more if needed
1 Bag 16 oz.- 1 lb. Chopped Spinach / Squeezed out all the liquids.
1 large Tomato / diced small
1 large Brown Onion / chopped
4 to 5 Cloves of Garlic / chopped
1/2 bunch Italian Open leaf Parsley / diced coarsely
3 tsp. Pomegranate Molasses
1 to 2 tsp. Zaatar mix
Salt, Blk. Pepper,

FETA CHEESE MIX ...
.
1 c Feta Cheese / crumbled
1/2 c Ricotta Cheese
1 - 3 oz. Bags of Mozzarella Cheese / not imitating cheese
2 clove of Garlic/ minced
1 whole Sujuk / Sliced
1 1/2 to 2 Zaatar mix
1/2 bunch of Italian Parsley / diced
Salt & Blk. Pepper to taste

Directions:
.
In a small bowl place your yeast sugar and 1/2 a cup of water warm. Stir, cover and set aside to proof.
Place your flour in your mixing bowl and add the salt, oil and the yeast mixture, and gradually start mixing and adding in your 1 3/4 water until it forms a semi sticky soft dough. If you don't need to use the whole water don't. Use as much as needed.
Mix for about 5 to 7 minutes on medium speed. Then turn over on a lightly floured surface, and knead by hand extra 5 minutes.
Place back into your floured mixing bowl, cover with saran wrap or nylon bag, then surround your bowl with the towel and cover the top with another towel and place in a warm place to rise.
Once you dough has risen, flour your board lightly and gently place the dough on the board and roll into a cylinder shape.
Cut the dough in 20 count, and make them into balls and cover them with a towel and let it rest for additional 30 minutes.

Preheat your oven at 350F.. if using Baker stone? Please let the oven on for at least half an hour for the stone to warm up. If using tray you need to wait at least 10 to 15 minutes for the oven to warm up along with the tray.

Now roll out your dough on the thin side, and place them on a floured surface until you have rolled out at least 6 to 8 rounds.
If using the tray spray lightly with cooking spray, using a paper towel crunched up wipe the oil evenly throughout the tray before placing your dough discs.

Place tray on the middle rack of the oven, and bake anywhere between 8 minutes to 12 minutes, according to your oven.
You will know when it is done, when the edges begin to brown lightly and the bottom has specks of light golden brown.

When baking the cheese flat breads, I sprinkled more Za'atar on top before baking and also the sujuk, you can put on any of the ones you like as I did.
